Why not try to locate a 'hub' that you can fly to and from there explore the Continent? Base it on location and from that centralized city take short day trips. From Bratislava, for example, you could visit a lot of countries in Central/Eastern Europe. Perhaps at another time you could do the same for France or Italy.

Like you said, Easyjet, Ryanair and co are cheap if you book well in advance, but for last minute trips they can be as expenisive as the regular airlines

The train is a nice way to travel but it can be pricey, and again especially late bookings.

The other alternative is by coach. The advantage is that it is always a cheap way to travel and even last minute. The disadvantage of course is that it is less comfortable and a lot slower than by plane (or train). So it is realy dependant on what you prefer. The Eurolines network is a good one for Europe
