From London, drive out to salisbury and see stonehenge, then drive on to breakon beacons and cardiff. They are great locations. Youre bound to see old castles and churches on the way.
On the route from London to Edinburgh I would suggest visiting the Yorkshire Dales National Park, the North Yorkshire Moors National Park and the Northumbria National Park. York is fine, but there is absolutely nothing to interest tourists in Leeds
definitely stop in at Durham and see the cathedral and castle … best Norman cathedral in the country … Durham is a very attractive ancient city … the best restaurant in Durham is the one in the cathedral crypt, nice food in lovely surroundings … one tip, leave your car at the railway station carpark (lovely views out over the city from there) and use the hoppa bus to get around the city, it’s all ancient narrow streets and you’ll be lucky to find anywhere to park the car)
after that head westwards on the A691 towards Consett and link up with the A68 which leads onto the A69 and do a side trip to see some of Hadrians Wall
afterwards get yourselves back onto the A68 and cross into Scotland at Carter Bar (lovely views)
if you’ve got time, leave the A68 and take the A6088 to Hawick, market town at the head of the Tweed Valley (there used to be lots of woollen milles there manufacturing tweed cloth, but I’m not sure how many are left now), then continue into Edinburgh on the A7
this route is obviously much longer than staying on the A1 but goes through some beautiful countryside
Dare I suggest you add the spice of the Rosslyn Chapel Scotland and add a touch of the quest for the Holy Grail and the Da Vinci Code to your dine out stories on your return. Read the book before you go. Don’t forget Edinborough Castle’s Chapel to get an insight into the losses in the so called Great War. Drop in to Gretna Green on your way to liverpool where you need to check into the hotel that catered to the Trans Atlantic Passengers of the great steamer days. I found it was awesome for its atmosphere where I could imagine the grand ladies with their wardrobes filling the massive bathrooms.
